Healthy Banana Pancakes - Powered by Crickets

These tasty pancakes are made using ingredients you will already have in the cupboard and are so much better for you than regular ones. INGREDIENTS
2 ripe bananas
2 large eggs
1 cup wholegrain oats (blended in a food processor to make a coarse flour)
2tbsp Tomorrow Foods Cricket Flour
1 tsp baking powder
1 tsp apple cider vinegar
½ tsp vanilla extract
¼ tsp cinnamon
¼ tsp salt

 

METHOD
1. Mash bananas in a medium sized bowl, mix in eggs until well combined.
2. Add the rest of the ingredients to the mashed banana mixture and leave to rest for 10-20 mins. (you can skip this step if you are in a hurry but it helps hydrate the oats)
3. Spoon mixture into a hot pan with coconut oil. Cook for 2-3 minute on a medium heat then flip. Cook for 1-2 minutes on other side. NOTE: Due to the natural sugars in the banana, they can brown quickly so be careful.
Garnish with fresh fruit and a small drizzle of maple syrup. Greek yoghurt also makes for a tasty and healthy topping.
